What you’ll need:
-boneless, skinless chicken breasts,
-olive oil
-diced yellow onion & green onions
-extra-long grain rice
-diced tomatoes and black beans
-garlic powder & chili powder
-low-sodium chicken broth
-colby jack, monterey jack or cheddar cheese
-kosher salt and pepper
-sour cream & guacamole
