This side dish is healthy but also flavorful an delicious! I love that the vegetables are thinly sliced and goes perfectly with the salt, pepper, and thyme seasoning. The cheese slightly covers the veggies and adds a yummy kick! The dish is also pretty cheap, especially if the vegetables come from your own or your friends garden. The cost per serving is only $1.10!

Jam those perfect and fresh veggies into a baking dish. Next generously throw some salt, pepper, and thyme over the veggies! The dish bakes for 30 minutes covered in foil. After that take off the foil and sprinkle with cheese. Stick the dish back in the over for another 15-20 minutes. Enjoy!

-zucchini & yellow squash
-medium potato and tomato
– dried thyme
